Sugar Cane & Water Chestnut Liang Teh
You'll Need:
Sugar Cane (get those skinny pre-cut ones from the market when they're in season... they've got reddish tinges in their outer layer)
Water Chestnuts
Rock Sugar
Method:
Scrub the Water Chestnuts. Make sure you do a good job of it and there's no leftover mud!! Use a mortar and give each one a good bash, yeah, work off that stress and frustration! hehehe! Mind you, don't get carried away and pound them to a pulp, I said, just ONE good bash so they're kinda partially split open.
Wash the sugar cane stems. I like to slice a bit off each end cause they might be dirty. Likewise, give each stem one good pound and once again, we want controlled anger management, not a massacre!
Throw the water chestnuts and sugar cane stems into a pot. Throw in some rock sugar and bring to the boil, then lower the heat and simmer.
When the liquid turns the color of liang teh, turn off the heat. Allow to cool or refrigerate if preferred.
Cannot keep this for too many days, or else you'll get sng (sour) liang teh which might also work to erm... 'cleanse your bowels'. -

The more presses you do, the less olive taste you get. Plus, it is a HUGE waste to use Extra virgin olive oil to cook! You kill the nutritional value, might spoil the flavor of the food plus it is expensive to waste it this way

Chilled Wine Jelly ( For getting rid of left over wine)
Ingredients
200ml chardonnay
350ml water
170g grape flavored gelatine
30g castor sugar, to taste
1 tbsp lemon juice
Straw berries, hulled & halved
Blueberries
Raspberries
(You can use other types of fruits if u like)
Method
1. Bring the 350ml water and sugar to a boil. Stir in gelatine until gelatine has completely dissolved
2. Gently add and stir in 200ml of chardonnay into the gelatine mixture over low fire without boiling till mixture is clear
3. Remove from heat and add in th elemon juice. Drop in the mixed berries and pour gelatine mixture into heat-resistance moulds and refrigerate for at least 4 hrs or until firm
4. Turn out the chilled wine jelly and serve with remaining berries or ice-cream if u like

Ingredients
3 eggs
1 onion (diced)
1 small mango (cut into strips)
1/4 tsp light soy sauce
1/4 tsp salt
Method
1. Whisk eggs, add soy sauce, salt, oinion and mango
2. Heat wok or pan and add oil
3. Pour egg mixture to form omelette. Cook using low heat -

Pork Chop Mole (no.. not the little garden mole )
vegetable cooking spray
4 pork chops boned loin chops about 1/2" thick
1/2 cup water
1 cup chopped onion
1/2 cup yellow bell pepper (strips)
1/2 cup red bell pepper (strips)
1 tablespoon minced jalapeno pepper, (seeded)
1 can (14.5 oz size) diced tomatoes, undrained with garlic & onion
1/2 ounce semisweet chocolate, grated
1 teaspoon chili powder
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon cumin seed
1/2 cup fresh cilantro, minced
Heat a large nonstick skillet coated with cooking spray over medium-high heat. Cook chops 4 minutes on each side or until browned. Remove from pan. Add water to pan, scraping to loosen browned bits. Pour mixture over chops; Cover and set aside.
Reheat pan coated with cooking spray over medium-high heat. Add onion, bell pepper strips and jalapeno; cook 4 minutes or until tender. Stir in tomatoes; cook 1 minute. Add chocolate and next 4 ingredients. Add chops; bring to a boil. Cover, reduce heat to medium-low and cook 5 minutes, stirring occasionally. Sprinkle with cilantro.
NOTES : Mole is a traditional sauce made with a blend of chiles, onion and garlic. Its characteristic ingredient, chocolate, contributes richness without adding sweetness. -
Potato Rosti With Smoked Salmon & Sour Cream (Diet Killer )
Ingredients
1 packet rosti seasoned shredded potato (500g) - can buy from Cold Storage
100g smoked salmon slices
1 tub light sour cream
1 bunch of English chives, chopped
Method
1. Oil frying pan and heat till smoking hot
2. Empty contents of rosti into pan and press it down with a spatula to form a thick pancake. Cook over medium flame for about 6 mins or till the edges of the pancake are golden brown
3. Flip pancake over to brown the other side for another 6 mins or so
4. Transfer pancake to plate.
5. Roll a few slices of smoked salmon into a rosette like you would a cone. Place a generous dollop of sour cream in the centre of the cake. Position the salmon rosette in the middle of the sour cream then garnish with chives.
I forgot to add. Nothing beats Rosti fried in lots of butter -
