i like to eat the meat in the body of the crab.. it takes a lot of shelling but i feel it tastes better and is more tender...

My dad's friend makes a mean cold crab. He uses the breed that has soft skin attached to the body that you eat together with the flesh (anyone know the name of the breed? ) Steamed, then served cold with chilli-vinegar sauce.
The man's spoilt me for any other crab.... nothing else comes close. T_____T

I suspect the cooking method is pretty standard.
The key is in the crab. You gotta get them at the right season, when they're moulting, so that there's a layer of skin under the shell, and the flesh is ripe, thick and heavy.
The uncle gets them from his own special seafood supplier. He used to run a restaurant.
