you must consider the fact that most americans are more muscular, and bmi is not an accurate source. the surveys and statistics were also not done with respect to bmi.. so.. yeah

I think cuisine varies even by itself.
If by local food you refer to hawker centre fare that has alot of frying, then its unhealthy. If you mean home-cooked chinese food like rice, steamed fish, vegetables and soup, it's healthy.
Similarly, ang mo food like oily burgers and fries are unhealthy, compared to grilled lean chicken meat and a side of garden salad.
The food and the preperation makes all the difference. So can't really generalise them by cuisine
