chicken curry would be the easiest, chinese style ones .... chicken pieces and potatoes ... but i use milk instead of coconut milk

when boil (not too hard, fire not too hot) allow to simmer.. (again, a gentle touch is necessary as if you boil it too hard, the oils of the coconut comes out and the thing is yukky )

Once, I made Hoon Kueh with Corn and squeezed the coconut milk myself. Needless to say, the hoon kueh was rich and very very delicious! Brought it to the office the next day and my colleagues wolfed them all down!
Same with a few cookies I made for Chinese New Year once too! One was a Jam Sandwich Cookie, and the other was my 'famous' Raisin Drop Cookies with Orange Zest. Mom, dad and bro finished it all before CNY!
Curry with milk... hmm... it's healthier, but doesn't it lose out in terms of flavour?
