The nyonyas do it differently. My nyonya colleague says to slice the bittergourd thinly, throw a generous amount of salt onto them and kinda mix them about to get the salt to spread evenly. Leave to stand for about 15-20 mins or longer. Then, rinse off the salt and voila! Cook them in boiling water for a while. Remove and drain off the water. Prepare either a can of Campbell's creamy soup or chicken gravy, pour over the brussel sprouts.
