Here are a few suggestions for a simple, easy-to-make, healthy and quite hearty breakfast. The keyword is healthy here:
a) Mediterranean tomato salad on bread - slices of very ripe tomatoes (unchilled for better taste), a drizzle of olive oil, mozzerella or feta cheese, a couple of torn fresh basil leaves (if available) and ground black pepper.
b) Cheese and tomato sandwich, can be grilled if preferred, lettuce/cucumber can be added too. Choose lower fat cheese if possible.
c) Peanut butter sandwich - choose peanut butter made without trans fat, or better still, get organic ones coz the fragrance is heavenly (Sorry, this means non-skippy, or mr peanut, etc. brands)
c) Sandwich with canned fish e.g. TC Boy brand of tuna with ginger/garlic/in Italian sauce. They are a bit salty so skip the gravy. Add tomatoes, cucumbers for crunch and fibre.
d) Fresh fruit, yoghurt + toast
e) Oatmeal with raisins, prunes, dried fruit, a few mixed nuts
