Are you looking for an aperitif to go with Japanese food? Japanese plum wine is a choice.
Japanese plum wine is called ume-shu and is lightly sweet and sour. It has been consumed over 1000 years in Japan. Ume-shu is made of green ume plums and white liquor called shochu (alcohol content of about 35%). Ume plum contains potassium and calcium, so ume-shu is said to be good for health.
Here is how to make plum wine:
Ingredients:
* 2 lb Green Ume Plum
* 1 1/2 lb Crystal Sugar
* 7 1/2 cups White Liquor
Steps:
1. Wash green ume plum and remove the calyxes with a bamboo stick.
2. Wash a large glass jar well and dry it out under the sun.
3. Dry ume plum with a towel.
4. Place ume plum in the jar.
5. Put crystal sugar over the ume plum.
6. Pour white liquor in the jar.
7. Seal the jar and store it in a dark, cool place.
8. It will be ready in three months. *The best time to drink ume-shu is one year after this.
