  BTW, five-spice powder burns very easily. That's probably the reason why you have to rinse it.

  the spice is not soluble and will turn the gravy very "sandy"
  
  and yes.. it'll work for a goose.. same recipe.. braised goose.. however, you need to allow the spices to do their magic for a longer time.. maybe around 5 to 6 days.. and use a fork to stab at the thicker parts of the flesh..
  
  and a huge pot.. allow about 3 to 3 1/2 hours of cooking

  it's home-made
  
  buy a portable type stove, build a rack out of casters, beams and some wood, put the gas cylinder underneath. you have a stove which you can wheel around

  try to make it yourself.. it's seriously easy...
  
  just remember to clean out the yuck in the nostrils and earholes of the duck.. or just chop off the head and throw it away.. but some people like the tongue.. it's yummy

  Errr..........must use cotton bud or not? Just kidding. Likely I'll just chop off the head, and feet. The webby thingy difficult to clean too, right?

  and no.. just a few seconds, when it's all brownish or black, just pour in the dark sauce
