ok, my mum and i had this problem with salmons
i like to eat it raw, like in sushi, but my mum tends to cook it,coz she dont like sushi and she doesnt know how to make sushi
i dont like it stir fried or anything, it practically kill the sweetness
and some hawker centres use other parts of the salmon instead of the mid-cut to fry, and truthfully, some of the taste is off
anyone got any good recipe to share on cooking salmon? -
grilled or steam is good enuf
there is naturally sweetness in it so there is not much of seasoning to do.....
u can do it the jipoonese style.......put in teriyaki sauce
u can pepper it for some taste oso
a dash of light soya sauce for the "chinese" style.....with some chopped garlic, if u like.....
but one thing......salmon kiu zui very much.....so u need quite a big piece to buffer for the "shrinking" after cooking...... -
Elindra's Teriyaki Salmon for Dummies
Clean salmon fillet, pat it dry, rub thin layer of cooking oil over salmon. Put in oven to grill till cooked. Pour Kikoman Thick Teriyaki sauce over it. Done

coat the dam thing w some cornstarch
dump it in vry hot pan. this will sear the surface n keep the moisture inside... -

in aluminium foil, place a heck of a lot of butter, some dill, rosemary, fennel and basil, seal.. as in fold the foil into a pack which seals everything inside airtight..
bake slowly for about 20 minutes...
open with a flourish at the table

replace with a little bit of olive oil, a touch of pepper and a small sprinkling of salt

i THINK my mom use black pepper n a bit of salt to season before she grill it (usin what i have no idea cos we have no grills and no oven)
or deep fry
very nice wor... if the salmon's in small pieces...
i dun really like salmon de but i will still eat it when she cook them like this -
you can also use fish stock, throw in some spices, and poach the salmon

Salmon Stir-Fry
3 tbsp oyster sauce
2 tbsp rice vinegar
2 tsp minced ginger
1 tsp soy sauce
2 each clove garlic, minced
1 1/2 lb salmon, skinned, boned and
1 cut into 3/4 inch cubes
5 tsp oil
1/2 lb bean sprouts
1/2 lb snow peas (if large cut in
1 half)
1 cup sliced green onions
1 each red bell pepper cut into
1 strips
1/2 tsp asian sesame oil
1/4 tsp sugar
1/8 tsp pepper
PREPARATION
Recipe Preparation
IN a medium bowl, combine two tablespoons of the oyster sauce with
vinegar, ginger, soy sauce and one clove garlic. Season with pepper,
if desired. Add fish, turning to coat. Cover and refrigerate at
least a half-hour.
In a nonstick skillet or seasoned wok, heat two teaspoons of the oil
over high heat. Add remaining garlic, stir fry 30 seconds. Add
sprouts, peas, green onions and red pepper. Stir-fry two minutes or
until tender-crisp. Stir in the remaining one tablespoon of oyster
sauce, sesame oil, sugar and pepper.
Remove from skillet and set aside.
Drain fish, discarding marinade. Heat remaining oil in same skillet.
Add fish and stir-fry about four minutes or until done. Add
vegetables. Gently toss. Heat through and serve immediately. -

Honey Hoisin BBQ Salmon Recipe
6 (6 ounce) salmon fillets
Marinade for salmon
1 tablespoon fresh ginger, chopped
2 tablespoons roasted garlic, pureed
1 teaspoon cracked black pepper
2 teaspoons sesame oil
2 tablespoons rice vinegar
1 tablespoon cilantro, chopped
Honey Hoisin Bbq glaze
1/2 cup honey
1/2 cup hoisin sauce
2 green onions, finely chopped
2 tablespoons rice vinegar
1 teaspoon sesame oil
salt
Rub the marinade all over salmon and marinate for 2 hours.
Preheat grill to medium high.
Place marinated salmon skin side down on grill and cook for 5 to 6 minutes until skin is crisp and easy to lift from grill.
Turn fillets over and baste liberally with honey hoisin BBQ glaze.
Continue to cook for another 4 to 5 minutes for medium doneness.
Turn fillets over and baste meat side liberally with the glaze before removing from grill.
You may cook this in the oven if you so desire. -
i like salmon in soup... like miso soup with salmon, golden mushrooms, button mushrooms, bean curd cubes, kelp and sea weed.
Cheap cuts of salmon like heads/fins.. are good for the soups leh especially
Cutlets i like pan fried or grilled with butter and herbs
Fillet I don't mind stir fry with dou miao or peppers but they must be the absolute last thing you put in and cannot overfry -
This ones good too...and very easy to make...
1 lb salmon fillets (2-3pcs)
Honey Mustard Glaze
1 tablespoon packed brown sugar
1 tablespoon butter or margarine, melted
1 tablespoon olive oil
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon Dijon mustard or coarse grain mustard
2 cloves garlic, minced
In a bowl, add all the Honey Mustard Marinade ingredients; stir to combine.
Place the salmon fillet in a shallow glass dish.
Pour marinade on top of the fillet; cover and refrigerate between 15 minutes to 1 hour.
Place salmon skin side down on a well greased grill, over medium heat (Save marinade).
Cover and grill 10-15 minutes; brush salmon 2-3 times with reserved marinade; turn once during grilling.
Salmon is done when it flakes easily with a fork. -

Pretty expensive though.
