Something you might want to try.
Salmon with a hint of lime juice, fresh chopped chillies, some honey, soy(or fish sauce) and some lime leaves. If you want to make it creamy, add some coconut. If you want it fresh and zingy, leave it without the coconut.
About a table spoon of lime juice or more, depending on your pref for zingy.
Depending on how hot you want it, one or two chopped chilli padi.
2-3 tablespoons of honey
2-3 tablespoons of soy sauce
depending on your pref about the lime leaves.
Depending on how many you are cooking for, adjust the quantities to suit. THis should suit about 2 fillets of salmon.
You can do this dish a couple of ways:
1. is to cook the sauce and keep it aside, then pan fry the salmon which you coat with a hint of salt and pepper. Then pour the sauce over.
2. Marinade the salmon with the sauce and leave over night preferably, but at least 2 hours. Then grill it wrapped in some banana leaf and add a dash of coconut over later and the remains of the "sauce"
Oh, try and get fillets with the skin still on.
