Yo, ShroCat! Cute you started this thread cause I just cooked a Loofa Melon dish last week!
And yeah, I was amazed that this could be found here in Melbourne too!
I cooked it with garlic, egg, and prawns. Peel the shells off the prawns and make a quick stock by boiling the shells in water. Then you can use the 'stock' when you cook your dish but don't add too much of the liquid cause the loofa melon itself renders fluid as it's being cooked and you don't wanna end up with a soggy dish, although the beaten egg does help to thicken the dish nicely somewhat.
