Actually it's not that hard to chop duck/chicken... you just need to know where to put the cleaver. I usually start with the wings and the legs (remove them first) then chop the duck in half (from head to the end). Once it's done, chop that into half (between the head and the end) and go from there... try to find the "joint" and avoid chopping through the "big bones".
