Ingredients: -
500gm prawns, shelled and steamed
80gm tunghoon, soaked in boiling water and drained
100gm shallots, sliced
3 stalks serai, sliced finely
3 limau perut leaves, shredded finely
4 red chillies, sliced finely
a few springs of coriander leaves, chopped
200 gm roasted groundnuts, pounded coarsely
75ml lemon juice
3 tbsps fish sauce
1 tbsp sugar
Method
1. Dissolve sugar in the lemon juice and fish sauce
2. Combine all the other ingredients in a salad bowl and mix well
3. Pour in the lemon juice and mix well.
