Problem is that you are right
Lately not many fat ducks around and Cold Storage stopped bringing in the Frozen Australian ones which have a nice layer of fat -
taht reminds me.
The duck and the new york steak i had on the cruise was kinda dry. no wonder the waiter was asking me whether i want hollandase sauce. -
