where is my lovely canadian bacon?
can't believe an easy project kena turned into a mess of paperwork...
get my dy director to approve, she throws it up to the No.2 to approve because somehow, she wants the bigwigs to see what we are doing more than anything else...
so it comes back to me to re-write slightly... with the dy director's little amendments...
the boss must jump in.. so now it's become a massive undertaking of paperwork.. of me digging up history and God knows what else...
because my boss looks at this No.2 as some kind of deity...
we look at him as some kind of useless bum sitting there to collect pay.. and a LOT of pay...
*&$#
back to work...

Italian Dish - Lardo
The procedures followed to cure the lard date back to the year 1000, and they have been handed down from generation to generation. The maturation takes place in marble tubs placed in caves or in cellars. To give the lard its unique flavour the tubs are rubbed with garlic and the pork lard is immersed in brine. Sea salt is added together with spices and herbs. The procedure must be repeated on each layer. Once the tub is full, it is covered with a wooden lid. The curing time goes from 6 to 10 months. The lard is removed from the container in August.
The Lard of Colonnata is white with a pink streak, which adds beauty and taste.
Thanks to the peculiar maturation procedure, the Lard of Colonnata is a natural product, free from preservatives and colouring.
The best way to eat this lard is on toasted bread or on polenta. A real treat.
To keep the lard after slicing, leave it in its salt and wrap it in a damp cloth. Do not cut the rind after slicing and wrap the cut end with it. Store in a cellar or at the bottom of the fridge by the vegetables.
In order to taste the true Lard of Colonnata, it is advisable to contact one of the twelve producers of the Consortium

lard on bread ......
*swoons ........
And check this out
Indeed, in a similar vein to the EU inspectors' hasty judgment, we had once assumed lardo represented a formidable menace to our arteries. Yet such grim notions proved false: paradoxically, lardo has less fat than butter and is loaded with nutrition. While its name may seem a perfect moniker for a person of girth, lardo should always be enjoyed guilt-free. And, as we said our final ciaos, that's exactly what we intended to do

Wah rau and this pure pig backfat and nothing less
so it's like putting slices of ham onto your bread huh ....
I thought it'd be like spreading crisco onto your gardenia ...
i want bacon too...
I bought a potato salad just now.... never tried it before at the Megabites Cafe at the Science faculty......
Basket.... it was more like a potato AND lettuce salad. The potatoes contituted only half of the salad.... the appearance of bulk was created by putting the potato salad in a thick basket of lettuce leaves.
And the cost? $2.90. Bloody overpriced.
@*^$#*@^$.......

Ya it is like putting slices of ham but the lardo is supposed to melt in your mouth instantly or like slices of chilled butter on hot toast :P
