My ah sir in station is a expert on healthy living.
Pu-er, or any form of brick tea.
Must be first steamed to loosen the leaves, his wife will pick out the twigs or stems that make the tea bitter.
Then they will dry the loosen tea leaves under the sun, at their landed property backyard on a rattan tray/mat.
Then they will bring in the dry tea leaves to stir fry in a huge wok a bit to bring out the flavours.
And must then store the tea leaves into a glass jar with lid. Cannot be metal jars.
