Option 2 doesn't look too shabby, and they let us swap items, e.g. salad for the longan dessert, sweet potatoes for corn, spaghetti for noodles.

I think it's alright. This year, Christmas Eve and New Year's Eve fall on Saturdays and I think people have plans on those days. There won't be such problems next year.
